Izu Matcha Brew Guide
Classic Usucha (everyday matcha): Sift 1–2g matcha (½–1 tsp) into a bowl. Add 60–80ml water at 75–80°C. Whisk briskly in a “W” motion for 15–25 seconds until frothy.
Stronger Koicha (thick, intense): Sift 3–4g matcha (1½–2 tsp). Add 30–40ml water at 70–75°C. Whisk slowly until glossy and smooth (less foam).
Matcha Latte (hot): Sift 1–2g matcha. Add 30–50ml water at 75–80°C and whisk smooth. Top with 200–250ml steamed milk (dairy or oat). Sweeten if you like.
Iced Matcha / Iced Latte: Whisk 1–2g matcha with 30–50ml cool or room-temp water until smooth. Pour over ice and top with cold water or 200–250ml cold milk.
Pro tips: Always sift to avoid clumps, use cooler water than black tea (boiling water makes matcha bitter), and whisk until the surface looks like fine foam.
