GETTING TO KNOW THE LEAF

One plant.
Quite a few personalities.

Black, green, white and oolong teas come from the tea plant, Camellia sinensis. How the leaf is processed helps create the differences you taste.

Green tea is heated early to limit oxidation. Black tea is allowed to oxidise more fully. Oolong is partially oxidised, with a broad range of styles. White tea is generally withered and dried with relatively little processing.

That’s why choosing a tea type is such a useful first step — and why there is still plenty to discover within each one.

A country is only the start of the story.

The growing region, elevation, weather, plant variety and harvest all influence a tea. Processing adds another layer. Two teas from the same country can be strikingly different.

A blend can bring together leaves from several origins. A product name may describe a place, a style or a recipe. For the tea in your basket, read its own origin, ingredients and brewing instructions rather than assuming that every tea in a country collection is the same.

Try two teas side by side. Notice the aroma of the dry leaf, the colour of the brew and what changes as it cools. You don’t need the right vocabulary. Start with what you enjoy.

Bring it back to the cup.

Now for the enjoyable part. Start with the brewing directions on your chosen tea, then adjust the leaf, water or time to suit your taste.
