Despite the familiar name, Porter Hill’s Thai Ginger Root is galangal root, not common culinary ginger. It has a brighter, more aromatic sort of heat, with citrus-like lift, a lightly piney edge and a dry peppery finish.
Choose it if you enjoy ginger’s warmth but fancy something less familiar. If you are after the rounded bite of a classic lemon-and-ginger drink, this will taste distinctly different.

Brewing guide
- Amount: 1 teaspoon per cup
- Water: Freshly boiled water (100°C)
- Time: Start at 3 minutes
Strain and taste it plain. Use a little more root or extend the next infusion if you want a stronger cup; shorten it if the peppery finish is too pronounced. A roomy basket infuser gives the cut pieces space to circulate.
Milk or ice?
It is generally best without milk, which can hide galangal’s brighter aroma. For a chilled drink, brew a little stronger, cool promptly and pour over ice.
